Magic the Gathering ruling help?

If you target a creature with a red spell that "destroys target creature", and then that opponent places an instant spell on the stack that gives that creature "protection from red until end of turn", does it still destroy the creature since no damage is done and it was already targeted? Or does it technically target the creature when it resolves?
